Introduction
About the semolina dumplings
Semolina dumplings are a classic of Viennese cuisine and are known throughout southern Germany as a delicious addition to soups. They are simple dumplings made from semolina, egg, milk and butter, which are boiled in hot water until soft and then served in the soup.
In 1902, J. M. Heitz, head of Vienna’s first private cooking school, invented the »Sezessionsnockerl«. He dyed a third of the dumpling dough green with spinach, another third red with paradeis pulp and the last third yellow. He thus created a colorful soup plate that alluded to the founding of the Vienna Secession, an association of visual artists who rejected the prevailing conservatism of their time and opened up a new perspective on the art world through their work.
