Introduction

About the Barraquito

The name of this coffee is said to go back to a regular customer of the »Bar Imperial« in Santa Cruz de Tenerife.

Don Sebastián Rubio, who regularly ordered a cortado with condensed milk, a dash of liqueur, a lemon peel and some cinnamon, was nicknamed »Barraco« or »Barraquito«, and so his name was transferred to the drink.

Ingredients

  • ½ hot espresso
  • ¼ sweet condensed milk
  • 1 piece of untreated lemon peel
  • 2 cl liqueur 42 or Tia María
  • ¼ milk froth
  • cinnamon

Step by step instructions

Step 1

First pour the condensed milk into an espresso glass, then the espresso with the liqueur and then the lemon zest.

Step 2

Froth up some milk, leave to stand for a minute and spoon the froth onto the Barraquito.

Step 3

If you do it carefully, you will end up with three layers of condensed milk, espresso and milk foam.

Step 4

Finally, you can sprinkle the milk foam with cinnamon.

If you don’t have Liqueur 42 or Tia María to hand, you can also use another sweet liqueur.
